Selection of grapes while on grapevines and on table separator;

Temperature and leavening controlled under 30°C in Slovenian oak tanks for 12 days with daily plumping;

Selected yeasts;

Maturation of 24 months in French and Slovenian oak barrels of first/second use;

Ageing of 36 months bottled before sale.


Visual Analysis: Clear, ruby red with touches of grenade.

Scent Analysis: Pronounced plum, berried, leather, vanilla and mineral notes.

Taste Analysis: Severe and elegant with prevalence of fresh moss notes and slightly minted.

Service and Harmonization

Harmonization: Matches perfectly with red and game meat – roasted or grilled - eventually sided by funghi and tartufo. Also, very interesting with cheeses such as the Tuscan pecorino.

Serving temperature: 18ºC a 20°C.

Recommended glass: Grand Ballon “Borgogna”.
